According to one study, the rate of cross-contamination with gluten in otherwise gluten-free food products may be as high as 20%. Researchers assessed 186 products without gluten-containing ingredients and found that 44 products out of 186 contained >20 ppm of gluten — an amount that could potentially elicit a reaction in those with celiac disease and gluten sensitivity (1).
